Cupcakes
I am the cupcake girl- seriously. Everyone on my residence hall staff agrees, as do most of my friends that know me well...I love love LOVE cupcakes.
Well, this is a spotlight on those wonderful, cute, little baby cakes, a perfect afternoon snack.
First of all, how gorgeous is THIS:

Next, check out this, from Rose and Radish...

I have been coveting these for almost a year now...and Rose and Radish have now gotten a new shipment in, with all kinds of new colors! They also have a medium-sized cupcake bowl. Really, I can just picture getting four or five of these, and storing my jewelry on my dresser or keeping a holster for paper clips and rubber-bands. Pretty pretty pretty.
And, check out THESE beauts: Banana Butterscotch Cupcakes, with butterscotch frosting...YUM YUM. Me and Pete made these from the book called Cupcakes! by Elinor Klivans, for the famous Cupcake Party of August 2007.

These were, by far, my favorite of the five kinds that we made, and the tastiest. I feel as though they are more "muffin-y" than "cupcake-y", but they are delicious, regardless.
Here, make them yourself and see!
Ingredients
cupcakes:
1 1/4 cups unbleached all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons (3/4 stick) unsalted butter, @ room temperature
1 cup sugar
2 medium bananas, broken into 1-inch pieces
2 large eggs
1/2 teaspoon vanilla extract
1/4 cup buttermilk (any fat content)
1 cup (six ounces) butterscotch chips
icing:
1/4 cup half-and-half
3/4 cup packed light brown sugar
1/2 cup (1 stick) unsalted butter, at room temperature
1 cup powdered sugar
1/2 teaspoon vanilla extract
Makes 12 regular cupcakes.
Make the cupcakes. Position a rack in the middle of the oven. Preheat the oven to 350 F. Line 12 muffin tin cups with paper cupcake liners.
Sift the flour, baking powder, baking soda, and salt into a medium bowl and set aside. In a large bowl, using an electric mixer on medium speed, beat the butter and sugar until blended and creamy, about 2 minutes. Stop the mixer and scrape the sides of the bowl as needed during mixing. Add the banana pieces, mixing until they are blended; you will still see some small pieces of banana. Add the eggs one at a time, mixing until each is blended. Add the vanilla and beat for 1 minute. On now speed, add half of the flour mixture, mixing just to incorporate it. Mix in the buttermilk. Mix in the remaining flour mixture until it is incorporated and the batter looks smooth. Stir in the butterscotch chips.
Fill each paper liner with a scant 1/3 cup of batter, to about 1/4 inch below the top of each liner. Bake until the tops feel firm and a toothpick inserted into the center comes out clean, about 25 minutes. Cool the cupcakes for 10 minutes in the pan on a wire rack.
Meanwhile, make the frosting. In a medium saucepan, heat the half-and-half and brown sugar over low heat, stirring often, until the brown sugar melts. Increase the heat to medium-high, bring to a boil, and boil for one minute, stirring often. Pour into a small bowl and refrigerate until cool to the touch, about 45 minutes.
In a large bowl, beat the butter and powdered sugar with an electric mixture on low speed until smoothly blended, about 2 minutes. At first the mixture will look crumbly, but then it will form a smooth mass. Add the vanilla and brown sugar mixture and beat on medium speed until smooth and creamy, about 1 minute.
Use a small spatula to spread 1 1/2 tablespoons of frosting on top of each cupcake. [For an added effect, Pete and I put one little butterscotch chip on top of each cupcake]
The cupcakes can be covered and stored at room temperature for up to 2 days.

3191
3191 is a website that two women, steph and mav, created. They live 3191 miles apart from each other, and each morning they take a snapshot of something in their morning- their breakfast, a cat, a picture of outside, etc.
It's really pretty. I love looking at all the beautiful color combinations and crafty things in their houses/apartments. But, they finished their "year of mornings" and now, starting January 15, they are starting a new idea- a "year of evenings".
I cannot wait. Here were some of my favorite snapshots from the past year or so...

1. What did you do in 2007 that you'd never done before?
Lived in an apartment with friends, as opposed to living at home with the family.
2. Did you keep your new years' resolutions, and will you make more for next year?
I didn't make any last year, but I DID make 14 for 2008.
3. Did anyone close to you give birth?
No one close to me, but Jordan had a baby, which made me happy, and my cousin and his wife are pregnant, and one of my favorite teachers from high school adopted a baby.
4. Did anyone close to you die?
A neighbor, but I think that's it :(
5. What countries did you visit?
I wish I could put something under this question.
6. What would you like to have in 2008 that you lacked in 2007?
A savings account, more homemade goods, and a sense of security about my writing.
7. What date from 2007 will remain etched upon your memory, and why?
Probably August 4th, the day that I had a cupcake party and then saw the Polyphonic Spree in the evening. GO SEE THE SPREE IF YOU EVER HAVE A CHANCE. You won't regret it, I promise.
8. What was your biggest achievement of the year?
Somehow juggling 18 credit hours, 10 hours of work a week, being an RA, and five meetings...and still getting straight A's [okay, so I got a C in my physical geography. Who cares?]
9. What was your biggest failure?
Self-doubt, not appreciating things that I had in front of me.
10. Did you suffer illness or injury?
Colds here and there, and a sinus infection at one point, I'm sure.
11. What was the best thing you bought?

Pete's, because he has the patience of a saint. I wish that I could have the same amount of it.

Well, I hope everyone's NYE celebrations were delightful- I had a nice time at both of mine.
So I've been working on the design of the blog today- not only have I switched around some colors and made those types of changes, Pete (master-cartoonist-extraordinare) drew me a fantastic picture of yours truly sitting on her grandma couch, working on a laptop. So I spent about four hours today and three hours yesterday working on that. Hopefully it will be up and running within the next few days.
Also, I decided that I am going to have a couple of categories, things that I'll talk about every week (like every Wednesday, or something...)
1. Things that make me happy [obviously this has been hijacked from MANY other blogs, but I loved the idea so much...] These posts will probably occur every Monday, after the weekend.
2. Where in the world....? This topic/category will consist of fun places I've been to during travels, or just around the St. Louis area. I love St. Louis and there's lots of fun stuff around here, but I didn't figure that out until I was about sixteen. So, for any and all people that are curious about this area, you should check this out.

Also, I decided that I am going to have a couple of categories, things that I'll talk about every week (like every Wednesday, or something...)
1. Things that make me happy [obviously this has been hijacked from MANY other blogs, but I loved the idea so much...] These posts will probably occur every Monday, after the weekend.
2. Where in the world....? This topic/category will consist of fun places I've been to during travels, or just around the St. Louis area. I love St. Louis and there's lots of fun stuff around here, but I didn't figure that out until I was about sixteen. So, for any and all people that are curious about this area, you should check this out.

Goodbye, 2007
There were lots of things I wanted to accomplish in 2007, but I really hardly did any of them.
So, here are my New Year Resolutions (NYR) so far:
1. Lose acne, once and for all.

2. Lose 20 pounds and maintain a healthy diet (that includes the dreaded exercising...)

3. Journal for at least 20 minutes a day.

4. Fix happy notions up and get 'er running, FINALLY.

5. Read one book a month.

6. Make at least one craft-related thing a month (on a larger scale).

7. Start a yoga class/regime.

8. Put at LEAST $20 a month into my savings account- which will equal at LEAST $240.

9. Learn to detach from everything negative.

10. Start a vitamin regime.

11. Learn not to say yes when I really mean no.

12. Write one love letter to Pete a month.

13. Paint more.

That's what I have so far. Anyone have any good resolutions they want to share with the rest of the class?
